Ingredients
- 1 cup sugar
- 1 cup peaches, sliced, with skin
- 1 cup water
- 1 habanero, sliced (remove seeds for a milder version)
- 1½ ounces peach habanero syrup
- ½ ounce lime juice
- 1½ ounces mezcal
- 1 ounce triple sec
- Ice
- Lime wedges (garnish)
- Salt (garnish)
Instructions
Start by making the peach habanero syrup. In a small saucepan, add sugar, habanero slices, peach slices, and water. Bring to medium heat and stir until sugar dissolves completely. Cool, strain, and let sit for an hour. The peach skins impart a beautiful red color to the syrup.
Salt-rim glasses (optional): while gently pressing, run a lime wedge around the rim of margarita glass. Fill a small plate with salt, invert the glass, and dip the rim to obtain a thin coating of salt.
Combine the liquors, lime juice, ice, and peach habanero syrup in a cocktail shaker. Shake until liquids are thoroughly mixed. Fill glass with ice and pour shaker contents over it. Garnish with peach slices and lime wedge.
