These crispy, herbaceous, and spicy vegan French fries are a perfect party appetizer or a delicious side dish for any meal. Serve them with a creamy Parsley Lime Sauce (see recipe, below) to take a bite out of the heat and add a balancing tanginess!

Ingredients

  • 3-4 medium sweet potatoes
  • 3 tablespoons cajun seasoning mix
  • ¼ cup cooking oil (or enough to coat potatoes)

Preparation

Preheat oven to 425°F. Cut potatoes into wedges or other desired shapes and set aside. In a mixing bowl, combine cajun seasoning and cooking oil, then add potato wedges and toss until all are well coated.

Cooking

Spread potato wedges out on a baking pan so that they are not touching. (If they are too close they will steam rather than crisp.) Bake for 15 minutes and then toss/turn the potatoes. Return to oven for an additional 20 minutes. Raise heat to broil for 3-5 minutes to brown edges (watching carefully to prevent burning). Let cool and serve with Parsley Lime dipping sauce (see recipe, below) or drizzle on top.
