The historic Simsbury 1820 House is now home to Metro Bis. Courtney Febbroriello and Chris Prosperi made the half-mile move to the restored bed and breakfast in September. These recipes from Chris give you a good idea of what might come out of the kitchen though they are not on the menu every day. And if you are one of those WNPR Food Schmooze listeners who always wanted to try Chris’s food but thought Simsbury too far for lunch or dinner? Now you can explore the area for a day, dine with Metro Bis, walk upstairs for a good night’s sleep, and meander home in the morning.

The Recipes:

Citron Cured Salmon Tartar

Chicken, Apples, and Fennel

Soy Braised Pork and Carrots

Olive Oil Mashed Potatoes
