Let's make some spectacular holiday dishes to wow our guests & discover how delicious & healthy plant-based cooking can be. For our debut cooking class at Lapham, we'll showcase two eye-popping holiday pies.  

You'll learn several plant-based culinary methods & how to work with ingredients that may be new to you. You'll discover how delicious & easy it is to create beautiful dishes that help restore our health as we enjoy every mouthful. You'll taste as we go, sample the food & receive recipes.
Festive Harvest Veggie Pie 
One pie will be savory & showcase local, organic red & golden beets, multicolored carrots, purple onions, yellow cauliflower, & Swiss chard, bathed in a creamy (non-dairy, non-nut) bechamel & baked golden in a light, gluten-free, flaky chickpea-millet flour crust.
Pear Fig Kabocha Pie 
For dessert, we'll create a beautifully colorful pie that shows off early winter's bounty with pear, figs, roasted kabocha squash, lemon & wild blueberries in an oat-chestnut flour crust (gluten-free), sweetened with fig & kabocha, & scented with fragrant orange peel cinnamon, ginger, & nutmeg.
Cathy's mission is to translate traditional cuisines & create original dishes that are delicious, beautiful to behold, & entirely health-promoting -- & to share them with you!
