Ingredients
- 1 jalapeno, deseeded and chopped
- ½ cup cilantro, roughly chopped
- 4 tablespoons mayonnaise
- 1 teaspoon lime juice
- 1½ heaped cup apple, cut into thin strips
- ½ cup all-purpose flour
- ¼ cup cornstarch
- ½ teaspoon powdered cayenne pepper
- ½ teaspoon salt
- ¼ teaspoon baking soda
- ¼ cup water
- Sea salt to sprinkle (optional garnish)
- Oil to deep fry
Instructions
Prepare the chutney by blending all ingredients together until mixture is smooth and creamy, then set aside.
Prepare the fritters in a wide mixing bowl, combining flour, cornstarch, salt, cayenne pepper, and baking soda. Add apple strips and mix until they are well coated with flour. Add water and mix, one tablespoon at a time, until the ingredients are well combined into sticky lumps.
Meanwhile, heat oil over medium heat in a deep frying pan. Once hot, carefully pinch bite size lumps of fritter mixture and place gently into the oil. (Use tongs and wear long sleeves and/or baking mitts — the oil can spit and cause burns!) Fry until golden brown, drain, and set aside. Repeat until done.
Once fritters have cooled enough to serve, plate and sprinkle sea salt on top (optional). Serve warm with creamy cilantro chutney on the side.
