Ingredients
- 1 tsp. salt
- 1¼ cup warm water
- 2 teaspoons sugar
- 2 tablespoons olive oil
- 1 cup bread flour
- 1 cup all-purpose flour
- 1 cup wheat flour
- 3 teaspoons active dry yeast
Preparation
Makes 1 loaf
In a large mixing bowl, dissolve yeast in ¼ cup warm water. Stir in remaining 1 cup of warm water, salt, sugar, and olive oil. Let sit for several minutes until mixture becomes frothy and yeast activates.
Mix in 1 cup of bread flour. Beat with wooden spoon 50 strokes, ~1 min. Mix in remaining wheat and all-purpose flour.
Turn out dough onto lightly floured counter and knead 5 min. or until dough is smooth and elastic. Gather into a tight ball and place in a greased bowl. Cover the bowl with a clean towel and set in warm place to raise, ~60 min. Once dough has doubled in size, turn out onto lightly floured surface and knead for 2 min. Shape into log and place in greased, 8.5” × 4.5” × 3” loaf pan. Let rise until doubled, ~45 min. Preheat oven to 425°. Bake 30 min. Once baked, allow the loaf to cool.
