Minty Cucumber-Apple Smoothie

With the refreshing crispness of cucumber, sweet notes of apple, bright and lemony citrus, and the awakening zing of ginger, this smoothie has some incredible kick! Balanced with the creaminess of banana, it is sure to leave you feeling vibrant and whole.

Ingredients
  

  • 2 Honeycrisp or Golden Delicious apples (or preferred sweet apples)
  • 2 medium cucumbers
  • 1 large lemon
  • 2 tablespoons fresh ginger, peeled
  • 1 frozen banana
  • 1-2 cups water (to preferences)

Instructions
 

  • Juice the lemon and add juice to a high speed blender. Core the apples and place in blender along with cucumbers, ginger, and banana. For easiest blending, roughly chop all before adding to blender.
    Blend and process until consistent, loosening with extra water, as needed. (I own a Vitamix brand blender that has a “smoothie” setting. However, any high-speed blender will do the job. Pulse, stir, add water, and repeat until you find the consistency you prefer.)
    Smoothie can be stored in an airtight jar or container for up to one day but should ideally be consumed as soon as possible for best texture and optimal nutrients!
