
Cranberry Apple Salad
Combining sweet cranberries, crisp apples, and salty feta cheese, this autumnal salad is perfect for your Thanksgiving table (or any other seasonal gathering). Tossed with an apple-flavored dressing that is equal parts sweet and savory, it is a superb vehicle for the tastes of fall.

Ingredients
Dressing
- 1 teaspoon apple butter
- ½ teaspoon apple extract
- 1 tablespoon lime juice
- 4 tablespoons extra virgin olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon sugar
- 2 tablespoons water
Salad
- 4 cups arugula
- 1 cup mixed microgreens
- ¼ cup dried sweet cranberries
- 1 apple, thinly sliced
- ⅓ cup toasted walnuts or sliced almonds
- ⅓ cup crumbled feta
Instructions
- To make the dressing, combine all ingredients in a small mixing bowl. Whisk well, until nicely combined, and set aside. In a large salad bowl, combine all salad ingredients (except feta). Add desired amount of dressing and toss well. Sprinkle feta on top just before serving.
