Blueberry Almond Dutch Baby Pancake

This delicious pancake recipe is sure to bring even the sleepiest kid (or adult) out of bed and to the table.

Ingredients
  

  • 3 eggs
  • ½ cup einkorn flour
  • ½ cup whole milk
  • 1 teaspoon almond extract
  • 1 tablespoon granulated sugar
  • 2 tablespoons salted butter
  • 1 cup blueberries (garnish)
  • ¼ cup slivered almonds (garnish)
  • Honey (garnish)
  • 3 tablespoons powdered sugar (garnish)

Instructions
 

  • Preheat a cast iron pan in the oven at 425°F. In a blender, mix eggs, flour, milk, almond extract, and sugar for 30 seconds on low. Set aside.
    When pan is heated, quickly remove it from the oven and slather it with the butter, coating the base and inner sides of the pan. Pour the blended batter mixture into the pan and immediately place in the oven. Bake for 18-20 minutes.
    When ready, remove from oven and garnish with blueberries and almonds. Drizzle with honey and dust with the powdered sugar. Share and serve as soon as possible! Enjoy!
