Summer is the perfect time to enjoy a light and refreshing cocktail, and barman Jeff Shaffer of The Steinbock Tavern in New Milford makes some of the area's best. The local vintners at Hopkins Vineyard in New Preston supply the wine that brings these drinks to life.

CHOCOLATE AND ROSES
 

Ingredients:

  • 1 bottle Hopkins Vineyard "Lady Rosé" 2015 Estate Bottled wine (or other dry rosé wine)
  • 1 bottle white crème de cocoa
  • 1 sprig fresh mint (optional)

Preparation:

  1. Pour 2 ¾ ounces rosé wine and ¾ ounces white crème de cocoa into a cocktail shaker full of ice. Shake vigorously.
  2. Pour into a chilled martini or cocktail glass. Optional: garnish with a sprig of fresh mint from your summer garden.

SUMMER'S BREEZE SANGRIA    

Ingredients:

  • 1 bottle Hopkins Vineyard "Lady Rosé" 2015 Estate Bottled wine (or other dry rosé wine)
  • 1 bottle of Hopkins Vineyard Silver-Label Sparkling Wine (or other sparkling white wine) Orange, lemon, and lime wedges (½ to ¾ inch pieces)

Preparation:

  1. Begin by infusing the rosé wine. Pour a 750 ml bottle of rosé wine into a large decanter. Add cut segments of fresh orange, lemon, and lime, giving each a gentle squeeze to help release fruit juices. Cover and refrigerate overnight.
  2. Pour 2 ounces infused rosé wine and 2 ½ ounces sparkling wine into a red wine glass full of ice. Garnish with cut fruit.
